Winter Veggie Stew

Ingredients:
2 tablespoons olive oil
1 small onion, minced
2 cloves garlic, minced
2 carrots, sliced
1 cup sliced mushrooms
1 stalk celery
1 tablespoon Italian seasoning
4 cups packed baby spinach
1 large bunch Tuscan kale, chopped
6 cups vegetable broth
1 (15-ounce) can of chopped tomatoes
Freshly ground black pepper, to taste

Directions:
Heat the oil in a large soup pot or Dutch oven over medium heat. Add the
onions, garlic, carrots, mushrooms and celery and cook for 10 minutes until
veggies are soft.
Add the Italian season, spinach and kale and stir until everything is combined.
Season with freshly ground black pepper to taste.
Add the vegetable broth and tomatoes with juices. Bring to a boil.
Reduce heat and simmer for 20 minutes until carrots are soft.
Serve immediately.

Vegan Recipe Sweet potatoes are a great alternative to white potatoes on the
Paleo diet, as they are loaded with fiber, vitamins and minerals and have
significantly less starch. While you don’t want to eat unlimited amounts, they are
perfectly fine and even healthy when eaten once in a while, as with this easy and
flavorful dish that can be a meal in itself.
