Tex Mex Coleslaw
Ingredients:
1 cup shredded chicken
1 cup shredded cabbage
1/2 cup diced red pepper
1 green onion, chopped
1 small tomato, diced
1/2 cup chopped fresh cilantro
1/4 cup olive oil
3 tablespoons lime juice
1/2 teaspoon cumin
Freshly ground black pepper, to taste
Directions:
Combine the chicken, cabbage, red pepper, onion and tomato in a medium
bowl. In another bowl, whisk together the remaining ingredients to make a
dressing. Season with freshly ground black pepper to taste. Pour the dressing over
the salad and toss gently. Refrigerate for up to 4 hours before serving to meld
flavors.
Paleo Barbecue Sauce
Makes 2 cups
Most store-bought barbecue sauces are going to be loaded with sugar, even if
they don’t taste particularly sweet. This homemade version is spicy and complex—
perfect for slow cooked meats, grilled chicken or anywhere else you would use
barbecue sauce.
