Roasted Baby Carrots
Ingredients:
1 pound baby carrots, preferably organic
2 tablespoons olive oil
Freshly ground black pepper, to taste
Directions:
Preheat oven to 400 degrees.
Lay the carrots on a parchment-lined baking sheet in a single layer. Drizzle
with olive oil. Season with freshly ground black pepper to taste.
Roast for 30 minutes, or until carrots are lightly browned and fork tender.
Serve immediately.
