Maple-Glazed Pork Roast With Sweet Potatoes
Ingredients:
2 tablespoons butter
1 boneless, free-range, organic pork loin roast
2 sweet potatoes, peeled and cubed
1/2 cup pure maple syrup
Zest and juice of 1 orange
1/2 teaspoon ginger
Freshly ground black pepper, to taste
Directions:
Heat the butter in a large skillet. Brown the pork roast evenly, 7-10 minutes.
Transfer the roast to a slow cooker. Add the sweet potato cubes.
Mix the maple syrup, orange juice and zest and ginger in a bowl. Season with
freshly ground black pepper to taste. Pour this mixture over the roast. Set the
slow cooker on low and cook for 6-8 hours.
Serve the pork with the sweet potatoes on the side.
