SNOW PEA CARROT SAUTÉ

Ingredients:
1 tablespoon clarified butter or canola oil
1 tablespoon minced fresh ginger
½ carrot, julienned
½ cup snow peas

Directions:
Kosher salt, to taste
Freshly ground black pepper, to taste
1. Preheat the oven to 375°F.
2. Marinate the fillet in the soy sauce for about 10 minutes. Marinating longer will
produce salty fish.
3. Remove the fillet from the soy sauce. Combine the flour and sesame seeds in a
shallow bowl and dredge the fillet in the mixture.
4. Heat the butter or oil in an ovenproof skillet over medium heat. Add the encrusted
fillet.
5. Cook for about 2 minutes, then turn the fish and place the skillet in the oven for
about 5 minutes.
6. Make the snow pea carrot sauté: Heat a stainless steel skillet or a wok over high
heat. Add the butter or oil, then add the ginger and cook for 30 seconds.
7. Add the carrots and cook for 1 minute. Then add the snow peas.
8. Cook the vegetables for another minute and season with the salt and pepper.
9. To serve, place a portion of the snow pea carrot sauté on each plate, top with the
fish and drizzle the sesame vinaigrette over the top of the fish.
