Drunken Fish
Drunken Fish
Ingredients:
2 – 3 pieces of halibut– depends on how many you are serving
6 – 8 small purple potatoes
1 head of kale
1 bunch of asparagus
2 cups (or however much you want) of white wine (whatever you have left after your
party weekend.
Seasonings: Olive oil, sea salt / Real salt, pepper, dried oregano and any other herbs
you love
Kitchen Items Required:
Fry Pan
Glass Baking Dish
Salad Spinner
Other Options to Consider: You can use any fish for this dish but I prefer a white fish
like halibut or ono. You can also substitute the greens for any other green you prefer. If
you do not like kale use bok choy or swiss chard instead. The important thing is to get
your leafy green in with this dish.
Salad Option to Consider: This dish is really nice with the Cabbage Salad found on .
Steps:
1. Get all ingredients and kitchen items required on the counter.
2. If halibut is still frozen, soak filets in a sink filled with cool water – this will take
about 10 – 15 minutes.
3. Begin cleaning and cutting the potatoes into cubes.
4. Pre-heat oven to 350 degrees for halibut.
5. Begin chopping and cleaning your vegetables using the salad spinner for the kale.
6. Put thawed halibut fillets in baking dish, add half of your white wine to the baking
dish, and add a little olive oil to each filet. Season fillets with sea salt / Real salt,
pepper and oregano.
7. Cover baking dish with tin foil and put halibut in oven 350 degrees for 20 minutes.
8. Add potatoes to your fry pan and lightly drizzle olive oil over them and add the rest
of the white wine – turn burner on medium high heat, cover fry pan and stir
frequently.
9. Begin making your salad and then work on the salad in between adding the veggies
to the fry pan.
10. Five minutes into cooking potatoes add asparagus to the pan – add a little more olive
oil if needed, add sea salt / Real salt, pepper and oregano to the vegetables cover and
stir frequently.
11. A few minutes later add kale to the pan, cover and stir frequently. Once the kale is
soft and wilted taste the potatoes to make sure they are soft.
12. Once halibut is done serve it on the plate on top of your potato mixture and enjoy!
13. Cleanup consists of your fry pan, baking dish and salad spinner.
Unstuffed Peppers
This is another recipe that came out of my childhood. My Mom used to make stuffed
peppers with ground meat, rice and spaghetti sauce. It used to be one of my most favorite
meals so I needed to come up with a meatless variation.
Prep / Cooking Time: 10 minute preparation, 30 minutes cooking.
