Pan-Fried Oysters
Pan-Fried Oysters
Ingredients:
3 dozen small fresh oysters, shucked
1/3 cup flour, or more
1 cup ground soda crackers (about 30)
2 eggs
6 tablespoons butter, divided
3 tablespoons vegetable oil, divided
Directions:
1. Drain the oysters and blot dry on paper towels. Place the flour and cracker crumbs on separate sheets of waxed paper.
2. Beat the eggs lightly. Dredge the oysters in flour, dip in egg, then press into the crumbs. Place on a waxed paper-lined baking sheet.
3. Heat 2 tablespoons butter and 1 tablespoon oil in a large heavy skillet over medium-high heat until the butter melts.
4. Fry a third of the oysters until golden, about 2 minutes per side. Drain on paper towels.
5. Wipe out the skillet and repeat twice with the remaining oysters, butter and oil.
