Chili Dogs
Chili Dogs
Ingredients:
3 sweet potatoes, sliced in half lengthwise
1 Tbsp. extra virgin olive oil
1 lb. ground beef
½ red onion, chopped
2 cloves garlic, minced
2 chipotle peppers, chopped
14 oz. diced tomatoes
1 Tbsp. chili powder
½ tsp. unsweetened cocoa powder
½ tsp. salt
½ tsp. pepper
6 hot dogs
Directions:
1. Preheat oven to 450ºF. Line baking sheet with aluminum foil and lightly
grease with nonstick spray.
2. Arrange sweet potato halves on baking sheet, face up. Drizzle with olive oil
and place in oven for 30 minutes.
3. Add beef, onion and garlic to large skillet over medium heat. Brown beef until
cooked through, and drain.
4. Add chipotle peppers, tomatoes, chili powder, cocoa powder, salt and
pepper to skillet. Bring mixture to a boil, then reduce heat and simmer until
ready to serve.
5. Remove potatoes from oven to a plate and let cool slightly. Place hot dogs
on same baking sheet and return to oven for about 7 minutes.
6. Scoop out inside of potatoes and reserve for another use.
7. Once hot dogs are done, serve them on sweet potato skins topped with chili.
