Herbed Pork Sirloin with Sweet Potato Hash

Ingredients:
1 Tbsp. extra virgin olive oil
3 lb. pork sirloin
1 Tbsp. garlic powder
1 Tbsp. dried oregano
1 Tbsp. dried basil
2 tsp. salt
1 tsp. pepper
4 ½ c. sweet potatoes, chopped
1 red onion, diced
3 cloves garlic, minced
1 c. apple, chopped
1 tsp. cinnamon
½ c. water
3 c. kale, chopped

Directions:
1. Preheat oven to 375ºF.
2. Heat oil in large, ovenproof skillet over medium-high heat. While oil is
heating, season pork thoroughly with garlic powder, dried herbs, salt and
pepper.
3. Place pork in skillet and sear on all sides. Once crust has formed, transfer
skillet to oven for 1-1 ½ hours, or until internal temperature reaches 160ºF.
4. Once done, remove pork from skillet to cutting board and loosely cover with
foil. Add sweet potatoes and onion to skillet with drippings and cook over
medium heat for about 8 minutes.
5. Stir in garlic and apples, cooking for about 1 minute.
6. Add cinnamon and water to skillet, reducing heat to medium-low. Stir in kale,
and cook until potatoes are tender and kale is wilted.
7. Slice pork and serve with sweet potato hash.
