Sweet Potato and Luncheon Meat Hash

Ingredients:
2 medium sweet potatoes, peeled and diced
2 cans luncheon meat, finely diced
1 onion, chopped
2 tablespoons margarine
1 tsp salt
1 tsp pepper

Directions:
1. Boil the sweet potatoes until just tender; drain.
2. Melt the margarine in a large skillet and cook the onion until soft.
3. Add the luncheon meat and sweet potatoes, season with salt and pepper and cook, turning occasionally, until crisp and browned.
