Easter Mints Kids Can Make

Makes about 1 1/2 pounds

Ingredients:
1/3 cup soft butter
1/3 cup light corn syrup
1/2 teaspoon salt
1 teaspoon flavoring (such as strawberry or lemon)
3 1/2 cups (1 pound) sifted confectioners' sugar
Food coloring (optional)

Directions:
1. Measure all the ingredients into a large bowl. Stir with a wooden spoon until too stiff, then knead with your hands until smooth.
2. If you like, divide into 3 portions and tint yellow, red and green with a few drops of food coloring, kneading a little flavoring into each.
3. Pinch off pieces, roll into balls and press lightly with a fork. Children who can't roll balls can make snakes, cut them into pieces and press with a fork.
4. Refrigerate on paper plates 30 minutes, until firm. Cover with plastic wrap and keep refrigerated.

Tip:
The mints taste even better the second day. This is a no-cook recipe that children can mix with their hands.
