Grilled Chicken Gyro

Ingredients:

3 cloves garlic, minced
1 tsp cumin
½ tsp dried oregano
Juice of 1 lemon
Salt and ground black pepper
1 Tbsp olive oil
½ Tbsp red wine vinegar
1 cup peeled, seeded, and finely chopped cucumber
How to Make It:
• Combine the chicken with ½ cup of the yogurt, two-thirds of the minced garlic, and
the cumin, oregano, and lemon juice, plus a few pinches each of salt and pepper, in a
large mixing bowl. Cover with plastic and marinate in the refrigerator for at least 2
hours and up to 8.
• Preheat a grill or grill pan to medium. While it’s heating, combine the remaining
yogurt and garlic with the olive oil, vinegar, cucumber, and salt to taste in a medium
bowl. Set it aside.
• Grill the chicken until it’s lightly charred on each side and cooked all the way
through, about 8 minutes on a hot grill. Remove it to a plate and set it aside. While the
grill is still hot, lightly toast the pitas on it. After the chicken has rested for 5 minutes,
slice it into strips and stuff it into the toasted pitas along with the yogurt sauce and any
other condiments you choose. Makes 4 servings.
