Slow-Cooked Beef Roast
Slow-Cooked Beef Roast
Ingredients:
· 1 tablespoon olive oil
· 1 chuck beef roast (3 pounds)
· 1/2 teaspoon salt
· 1 teaspoon black pepper
· 2 cups low-sodium beef broth
· 6 large carrots, sliced
· 3 medium onions, diced
· 2 cups mushrooms, sliced
· 3 cloves garlic, minced
· 3 stalks celery, diced
· 2 tablespoons tomato paste
· 1 tablespoon Worcestershire sauce
· 2 sprigs fresh thyme
· tablespoons all-purpose flour
Directions:
1. Heat oil in a large skillet over medium-high heat. Sprinkle roast with salt and
pepper. Place roast in pan and brown on all sides, about 5 minutes. Put roast in slow
cooker.
2. Add remaining ingredients except for flour. Stir, cover, and cook on low for 7-8
hours or high for 3-4 hours, until roast is cooked through.
3. Remove a 1/4 cup of broth from slow cooker and place in small bowl. Add flow
and mix until flour is dissolved. Add back into slow cooker and stir. Remove and
discard thyme sprigs.
4. Slice roast and top with vegetables and sauce.
