Pork Tenderloin with Apples and Sweet Potatoes

Ingredients:
· 3/4 cup apple cider
· 1/4 cup apple cider vinegar
· 3 tablespoons maple syrup
· 1/2 teaspoon paprika
· 1 teaspoon fresh grated ginger (or 1/4 teaspoon dried)
· 1 teaspoon ground black pepper
· 2 teaspoons olive oil
· 1 12-ounce pork tenderloin
· 1 large sweet potato, peeled, cut into small cubes
· 1 large apple, peeled, cut into small cubes

Directions:
1. Preheat oven to 375 degrees F.
2. In a bowl, combine apple cider, vinegar, maple syrup, paprika, ginger, and pepper.
3. In a Dutch oven or large ovenproof sauté pan, heat oil over medium heat. Add pork
tenderloin and cook, turning, until all sides are browned, about 8-10 minutes.
Remove pan from heat.
4. Add sweet potatoes to pan around the pork. Pour apple cider mixture over pork.
Cover and bake in oven for 20 minutes or until tenderloin reaches internal
temperature of 145-150 degrees F.
5. Remove pan from oven and add apple pieces. Return to oven and cook, uncovered,
for another 8-10 minutes, or until tenderloin reaches 170 degrees.
6. Let sit for 10 minutes before slicing pork.
7. Serve pork with apples and sweet potatoes on side. Cover with any remaining
sauce.
