Hungarian Goulash
Hungarian Goulash
Traditionally served with buttered noodles.
Ingredients:
2 pounds stewing beef, cubed
Oil
1 cup onions, sliced
1 cup celery, sliced
1 cup carrots, sliced
1 cup green peppers, cut in strips
2 cloves garlic, minced
4 tablespoons paprika
1 teaspoon salt
1 teaspoon fresh ground pepper
1 bay leaf
3 tablespoons tomato paste
2 cups bouillon or canned beef stock
1/2 cup sour cream
Directions:
1. Sear the meat in oil in a large cast iron pot. Remove the meat.
2. In the pan juices, sauté the onion, garlic, green pepper and celery until tender. Stir in the paprika, salt, pepper, bay leaf and tomato paste.
3. Add the bouillon and carrots. Return the meat to the pan. Bring to a boil, reduce the heat and simmer, covered, 2 hours or until the meat is tender and the liquid is thickened.
4. Just before serving, stir in the sour cream.
