Smoked Tofu Bites with Edamame Hummus
Requires a grill or stovetop smoker.
Ingredients:
Marinade ingredients
Tofu
Wood chips
Edamame Hummus:
2 cups shelled edamame
1 tablespoon tahini paste
1 tablespoon reduced-sodium soy sauce
1 tablespoon lemon juice
8 toasted slices whole wheat bread
Directions:
1. For the tofu: In a large bowl, combine all the marinade ingredients. Wrap the tofu in paper towels and press firmly to remove excess moisture. Place the tofu in the marinade, making sure it is completely submerged. Marinate at least 3 hours or overnight.
2. Remove the tofu from the marinade and slice each half in half, making quarters.
3. Assemble a stovetop smoker according to the manufacturer's directions. Place the wood chips in the base, arrange the tofu on the rack and smoke over medium heat for 1 hour. Set aside to cool.
4. For the hummus: Combine all the hummus ingredients in a food processor and blend until smooth.
5. To assemble: Slice the smoked tofu into 1 to 1 1/2-inch pieces. Spread 1 tablespoon hummus on each slice of bread. Lay 2 slices of tofu on 4 slices of the bread and cover with the remaining 4 slices.
6. Cut the sandwiches into quarters, trimming off the crusts with a serrated knife, if desired.
