Chicken and Pasta
Ingredients:
12 ounces angel hair pasta, cooked until al dente
2 tablespoons grated low-fat Parmesan cheese
Directions:
1. Make the balsamic glaze in a small saucepan. Simmer the vinegar and
sweetener until the liquid is reduced to ¼ cup.
2. Combine the softened margarine, garlic powder, and salt and pepper to taste to
make the garlic butter.
3. To marinate the tomatoes, add the shredded basil to the diced tomatoes. Toss
with the garlic, oregano, and onion powder. Set aside until needed.
4. To make the marinara sauce, sauté the garlic in 2 tablespoons of the garlic
butter until the garlic softens. Add the salt, pepper, tomato sauce, and shredded
basil. Simmer for about 5 minutes. Take the pan off the heat and set aside.
5. Preheat the broiler.
6. Spread the remaining 2 tablespoons garlic butter on the 4 slices of wheat
bread. Toast under the broiler until a light golden brown.
7. Season the chicken with salt and pepper. Broil, turning once, until cooked
through and no longer pink in the middle. Slice each breast into 4 strips.
8. Combine the marinated tomatoes with the marinara sauce. Toss the angel hair
pasta with the mixture and divide among four plates. Layer the chicken strips
over the pasta. Sprinkle each dish with the cheese, then drizzle the balsamic glaze
on top. Serve with the toasted garlic bread.
