Sesame-Carrot Edamame Salad
Ingredients:
water, bottled, generic
edamame, frozen, prepared
spices, coriander seed
rice vinegar,
oil, sesame, salad or cooking
seeds, sesame seeds, whole, dried
salt, table
carrots, raw
onions, spring or scallions (includes tops and bulb), raw
Directions:
1.
Bring 8 cups water to a boil in a saucepan.
Add edamame; cook 3 minutes or until tender.
Drain.2.
Combine cilantro, vinegar, sesame oil, sesame seeds, and salt in a medium bowl, stirring with a whisk.
Stir in edamame, carrot, and green onions.
