Just one tbsp chopped tomato
A single tbsp chopped scallion
Juice from 1/2 lime
For the quesadilla:
Cooking spray
Two reduced-carb full wheat flour tortillas
Six tbsp shredded small weight cheddar jack
Directions:
Mix the ingredients for the easy pico de gallo in a low bowl.
Heat a nonstick skillet over medium heat. Spray the skillet with oil and add a tortilla. Brown relating to Two minutes on each individual aspect, then spread 1/4 cup picadillo on 50% of the tortilla. Best with cheese and half of the pico de gallo, then fold and thrust down with a spatula. Cook One to Two minutes on every facet, until the cheese is melted and the tortilla is crisp.
