Ratatouille penne bake

Ingredients:
substances
1 low aubergine
2 courgettes, thickly sliced
200g/7oz enterprise tofu, cubed
3 garlic cloves, beaten
2 teaspoons sesame seeds
1 reduced pink pepper, seeded and sliced
1 onion, finely chopped
150ml/5fl oz vegetable stock
3 tomatoes, peeled, seeded and quartered
1 tablespoon chopped fresh new combined herbs
225g/8oz dried penne
salt and recently flooring black pepper

Directions:
First, reduce the aubergine into 2.5cm/1within just cubes. Put into a colander with the courgettes, sprinkle with salt and go away to drain for 30 minutes.
Then, mixture the tofu with the soy sauce, 1 garlic clove and the sesame seeds. Go over and marinate for 30 minutes.
Then, put the pepper, onion and getting garlic into a saucepan with the stock. Convey to the boil, go over and cook for 5 minutes right until smooth.
