How To Juice Cranberries
Ingredients:
cranberries, dried, sweetened
water, bottled, generic
sugars, granulated
Directions:
Pick over cranberries first to remove any soft or rotted berries.
Combine cranberries and water in a stainless steel saucepan, and bring to a boil.
When you hear the skins on the berries start popping, start the timer for ten minutes and let the berries boil.
Remove from heat.
Strain the berries and water mixture through a colander lined with cheesecloth, reserving the liquid.
Discard the pulp.
Dump the water and juice back into the saucepan and bring back to a boil.
When its at a good rolling boil, add the sugar, and let boil for another two minutes.
Let cool.
This makes about a quart.
