Cherry-Pineapple Mousse
Ingredients:
cheese, parmesan, hard
vanilla extract
cherries, sweet, raw
pineapple juice, canned or bottled, unsweetened, without added ascorbic acid
cream, fluid, heavy whipping
sugars, powdered
Directions:
In a blender or food processor, add cream cheese, vanilla, cherry preserves, and pineapple juice.
Process until combined.
Using a hand mixer, whip heavy cream and sugar in a bowl until fluffy peaks form.
Fold into cherry-pineapple mixture.
Divide among dessert vessels, cover with plastic wrap and refrigerate until ready to serve.
