Guacamole

Yield: virtually 1 qt (1 L)

Ingredients:
- 4 Ripe avocados, medium sizing
- 2 oz (60 g) Onion, grated
- 1 Lower, sizzling green chile these as jalapeño, minced (see notice)
- 1 fl oz (30 mL) Lime or lemon juice
- 1 fl oz (30 mL) Olive oil
- to taste Salt
- 12 oz (375 gl) Clean tomato (optional)

Directions:
1. First, pit and peel the avocados. Mash the pulp coarsely. The purée must be a bit lumpy pretty than gentle.
2. Next, merge in the onion, minced chile, lime or lemon juice, olive oil, and salt to taste.
3. Then, if preferred, peel, seed, and cube the tomato and combine it into the avocado.
4. Finally, protect tightly with plastic wrap put on the seem of the guacamole. This is to cover it to air, which will darken it. For the very same purpose, guacamole need to not be developed as well very long before serving season. Chill the guacamole till well prepared to serve.
