German Style Orzo Salad
Ingredients:
1 lb orzo pasta, 1/2 cup olive oil, lime zest, 1/4 cup lemon juice, 2 tbsp chopped basil, 4 minced garlic cloves, 2-3 tbsp Dijon mustard, salt, pepper, 8 oz crumbled feta, 1 chopped orange bell pepper, 1 chopped red bell pepper, 1 1/2 cups chopped seeded tomatoes, 3 tbsp capers, 3/4 cup quartered kalamata olives, 1/2 chopped red onion, 1 tbsp chopped oregano, 2 chopped green onions.
Directions:
Cook orzo as directed and drain well. In a bowl, emulsify olive oil, lime zest, mustard, garlic, and basil; season with salt and pepper. Combine the cooked pasta with feta, peppers, tomatoes, onion, olives, and capers. Pour the dressing over the mixture and toss. Fold in green onions and oregano. Chill for 2 hours before serving.
