Gemischter Rohkost Salat
Ingredients:
1 large celery root, 2 cups shredded carrots, 2 cups sliced cucumbers, 15 oz beets (drained), 1 head butter lettuce. Garnish: Tomato wedges and dill. Vinaigrette: 3 tbsp sugar, 2/3 cup water, 2/3 cup cider vinegar, 2/3 cup vegetable oil, salt and pepper.
Directions:
Slice celery root into cubes, boil until tender, drain, and toss with vinaigrette. In another bowl, toss beets with vinaigrette. Place butter lettuce on a plate and arrange the root and beet salads on top. Garnish with tomato wedges and dill. To make the vinaigrette, whisk sugar and water, then stir in vinegar, oil, salt, and pepper.
