Herbed Tomatoes, Chicken & Rice
Ingredients:
salad dressing, italian dressing, commercial, regular
chicken, broiler or fryers, breast, skinless, boneless, meat only, raw
spices, garlic powder
tomatoes, red, ripe, raw, year round average
rice, white, long-grain, regular, unenriched, cooked without salt
cheese, mozzarella, low sodium
tomatoes, red, ripe, raw, year round average
spices, coriander seed
strawberries, raw
nuts, almonds
water, bottled, generic
Directions:
Heat dressing in a large skillet over medium heat.
Add chicken and garlic; cover.
Cook chicken on each side until browned.
Remove from skillet; set aside.
Add canned tomatoes and 1 cup of water to skillet.
Stir in rice; bring to a boil.
Reduce heat to low and simmer uncovered, 10 min.
Return chicken to skillet.
Sprinkle with cheese; cover.
Cook on low heat for 5 min.
Top with tomatoes and cilantro.
Divide meal among 4 plates and serve.
Enjoy 1 cup strawberries topped with 1 Tbsp.
almonds per person for dessert.
Serve meal with an 8 fl oz glass of water per person.
