Cold Soba Noodles with Ginger-Peanut Sauce
Ingredients:
noodles, japanese, soba, dry
onions, spring or scallions (includes tops and bulb), raw
peanut butter, smooth style, without salt
oil, sesame, salad or cooking
roland, seasoned rice wine vinegar,
soy sauce made from soy (tamari)
spices, ginger, ground
sugars, granulated
salt, table
seeds, sesame seeds, whole, dried
Directions:
1.
Cook noodles in boiling water until tender.
Remove immediately and place in an ice bath to stop cooking and shock the noodles.
Drain and set aside in a bowl.

In a small bowl, combine the peanut butter, sesame oil, soy sauce, vinegar, ginger, sugar, and salt; use a whisk to combine.
Pour sauce over the noodles, add onions and sesame seeds, and mix well to combine.
