Turkey with Vegetable Soba Noodles

Turkey with Vegetable Soba Noodles

Ingredients:
3 x 4oz turkey, breast tenderloin steaks
6 oz soba noodles, 100% whole-grain, dried
2 tsp light olive oil
2 cups sugar snap peas
1 cup carrots, julienned
1 cup zucchini, julienned
1 teaspoon sesame oil
1/2 cup plum sauce

Directions:
Method:
1. Cook soba noodles according to the directions on the packet and then drain. Return
them to the saucepan, cover and keep warm.
2. Meanwhile, pour the olive oil into a wok or large skillet and heat it over a
medium-high heat.
3. Stir-fry snap peas, carrots and zucchini in hot oil for 2 minutes or until vegetables
are crisp-tender. Remove vegetables from wok.
4. Add turkey and sesame oil to the hot wok. Stir-fry for 3 to 4 minutes or until turkey
is tender and no longer pink.
5. Add the plum sauce, stir and add the cooked vegetables back to the wok; stir to
coat ingredients with sauce. Heat through. Serve immediately over the warm soba
noodles.
