Traditional CREAMY SLAW

DRESSING
¾ cup mayonnaise
3 tablespoons white Wine vinegar
2 tablespoons granulated sugar
1 teaspoon celery seed

Kosher salt
Freshly ground black pepper
SLAW
½ small mind green cabbage, thinly sliced (4 cups)
2 cups coarsely grated carrots
1 cup finely diced crimson bell pepper
½ cup about chopped fresh new Italian parsley leaves

1. in a superior bowl mix the dressing ingredients, which includes ¾ teaspoon salt and ½ teaspoon pepper, and whisk until the sugar and salt are dissolved. add the slaw ingredients and blend properly. Style and add much more salt and pepper, if preferred. add and refrigerate until chilled, at minimum 2 hrs or up to 1 working day.
2. Just before serving, drain the coleslaw in a colander and then shift to a serving bowl.
