Couscous and Raw Vegetables

Ingredients:
1/2 cup veggie broth, 1/2 cup distilled water, 10 oz package couscous. Vegetables: 1/2 cup carrots (matchsticks), 1/2 cup broccoli florets, 1/4 cup zucchini chunks, 1/4 cup red pepper strips, 1/2 cup chopped green onions, 1/2 cup cauliflower florets, 1/4 cup yellow squash (sliced). Dressing: juice of 1/2 lemon, 1/3 cup olive oil, 1/8 tsp ground cumin, 1/8 tsp curry, pinch garlic powder, 1/3 cup pine nuts (optional)

Directions:
Bring broth and water to a boil, add couscous, stir, cover, and remove from heat. Let stand for 5 minutes. Uncover and add vegetables. Combine all dressing ingredients except pine nuts. Toss with salad. Refrigerate for at least 1 hour. Garnish with pine nuts.
