Clean Eating Sesame Spinach Salad With Chicken
Ingredients:
chicken, broiler or fryers, breast, skinless, boneless, meat only, raw
spinach, raw
radishes, raw
spices, ginger, ground
seeds, sesame seeds, whole, dried
oil, olive, salad or cooking
roland, seasoned rice wine vinegar,
soy sauce made from soy (tamari)
oil, sesame, salad or cooking
Directions:
Heat approximately 2 inches of water in a large saucepan or stockpot.
Add chicken (and add enough water to cover chicken) and bring to a boil over medium heat.
Reduce heat to low, cover and simmer until chicken is cooked through, approximately 15 minutes.
Set chicken aside and allow to cool completely.
Meanwhile in a large bowl, combine spinach, radish, ginger and sesame seeds.
Using 2 forks, shred chicken into 2-inch strips and add to spinach mixture.
In a small bowl, whisk together all dressing ingredients.
Pour over chicken and toss to combine.
Cool to room temperature and refrigerate before serving, for best flavor, for 2-3 hours.
Will keep in the refrigerator for up to 4 days.
