Veloute Sauce (Mother Sauce for Many Things Ex: Tetrazzini)
Ingredients:
butter, without salt
wheat flour, white, all-purpose, unenriched
salt, table
spices, pepper, black
soup, chicken broth or bouillon, dry
cream, whipped, cream topping, pressurized
Directions:
Melt butter then add flour, salt and pepper.
Blend well.
Slowly add stock.
Bring to a boil and boil 2 minutes.
Add cream.
