Blue Cheese And Caramelized Shallot Dip Recipe

Ingredients:
oil, olive, salad or cooking
shallots, raw
salad dressing, mayonnaise, regular
cream, sour, cultured
cheese, blue

Directions:
Heat oil in heavy medium saucepan over medium-low heat.
Add in shallots.
Cover and cook till shallots are deep golden, stirring occasionally, about 20 min.
Cold.
Whisk together mayonnaise and lowfat sour cream in medium bowl to blend.
Add in blue cheese.
Using rubber spatula, mash mix till smooth.
Stir in caramelized shallots.
Season dip to taste with salt and pepper.
Cover dip and chill till flavors blend, about 2 hrs.
(Can be made 2 days ahead.
Keep refrigerated.)
Serve dip chilled or possibly at room temperature.
