Broccoli Noodle Stir Fry Recipe
Ingredients:
noodles, egg, dry, unenriched
cornstarch
soy sauce made from soy (tamari)
rice vinegar,
spices, pepper, red or cayenne
oil, sesame, salad or cooking
oil, olive, salad or cooking
carrots, raw
Directions:
Break noodles into pcs, reserved seasoning packet.
Place noodles in a 1-qt microwave-safe casserole.
Add in 1 c. hot water.
Micro-cook, uncovered, on 100% power (high) for 2 1/2 to 3 min, or possibly till noodles are softened, stirring twice; drain.
For sauce, in a small bowl combine seasoning packet, 2/3 c. cool water, cornstarch, soy sauce, vinegar, and red pepper.
Set aside.
In a large skillet heat sesame and veg.
oil over medium-high heat.
Add in broccoli; stir-fry 3 to 4 min, or possibly till crisp-tender.
Stir sauce; add in sauce and noodles to skillet.
Cook and stir till bubbly; cook and stir 1 minute more.
NOTES : Combine fresh broccoli and ramen noodles for this quick-to-make side dish.
