Mustard and Thyme Roasted Beef
Ingredients:
mustard, prepared, yellow
salt, table
spices, pepper, black
spices, thyme, dried
oil, olive, salad or cooking
beef, rib eye steak, boneless, lip off, separable lean and fat, trimmed to 0" fat, all grades, cooked, grilled
Directions:
Preheat oven to 120C (250F).
Add the mustard seeds, salt, pepper and thyme in a mortar and pestle and pound until lightly crushed.
Pour the oil in, and stir until well combined.
Set aside.
Brush the beef with the extra oil.
Heat a large non-stick skillet over high heat and cook each side of the beef for about 2 minutes or until brown.
Remove from the pan.
Use the kitchen string to secure the beef, then rub the mustard mixture all over the beef.
Arrange on a rack in a baking dish or in a roasting pan and roast for 1 1/2 hours for medium rare.
