Mashed Banana Fritters
Ingredients:
bananas, raw
rice flour, white, unenriched
butter, without salt
Directions:
Lightly mix flour with mashed banana.
(Add 1 tablespoon of white or unbleached flour if mixture is too liquid.
You may add 1 teaspoon of brown sugar if you have a sweet tooth.)
Lightly butter a frying pan on medium heat.
Drop spoonfuls of the banana batter onto the pan.
Fry for about 3 minutes on each side until golden brown.
Serve warm.
