The Real Belgian Speculoos

Ingredients:
wheat flour, white, all-purpose, unenriched
sugars, brown
leavening agents, baking soda
spices, ginger, ground
butter, without salt
milk, fluid, 1% fat, without added vitamin a and vitamin d

Directions:
In a medium bowl, mix flour, soda, brown sugar and spices.
Add butter (cut in little bits) and milk.
Mix to make a light dough.
Set aside in the fridge for 3-4 hours or for a complete night.
Use speculoos pan (that represents Saints of animals), sprinkle it with flour (just a little) and press dough on it.
Remove the excess with a knife.
Turn out the dough from the speculoos pan and put it on a lightly greased flat pan.
(if you dont have a speculoos pan, spread the dough and cut it with cookie cutters).
Cook the speculoos in a preheated oven (400 degrees ) for 15 minutes.
