Cauliflower Cheese Chowder
Ingredients:
cauliflower, raw
onions, raw
celery, raw
tomatoes, red, ripe, raw, year round average
water, bottled, generic
salt, table
parsley, fresh
wheat flour, white, all-purpose, unenriched
butter, without salt
milk, fluid, 1% fat, without added vitamin a and vitamin d
mustard, prepared, yellow
soy sauce made from soy (tamari)
cheese, cheddar
Directions:
Combine chopped vegetables, water, salt and parsley in a soup kettle.
Bring to a boil, reduce heat, cover and simmer until cauliflower is tender, about 15 to 20 minutes.
Knead flour into softened butter to form a smooth mass.
Drop by bits into the simmering soup.
Stir until smooth and slightly thickened.
Gradually stir milk into soup, then mustard and soy sauce.
Heat through.
Add cheese in stages, stirring to melt.
Makes 2 quarts, serving 6.
