FAVA BEANS WITH ANCHOVIES

Fave alle acciughe

2 1/4 lbs.. (1 kg) new fava beans
Salt and freshly ground black pepper
To taste
2 cloves garlic, chopped
1 pinch marjoram
2 tbsp. (30 ml) vinegar
1/4 cup (60 ml) a lot more-virgin olive oil
4 anchovies, desalted, deboned,
And chopped (optional)

Boil the fava beans in a medium pot of salted water right up until they
Are al dente, over 5 minutes; then drain.
Plan the sauce: Mixture the garlic, marjoram, vinegar, olive oil,
And anchovies, if favored. Time with salt and pepper and drizzle
In excess of the fava beans.

As a substitute, serve the fava beans with chopped fresh chives, oil,
And salt and pepper to taste.
