Carrot-Cranberry-Walnut Salad
Ingredients:
tofu, raw, regular, prepared with calcium sulfate
vinegar, cider
lemon juice, raw
mustard, prepared, yellow
salt, table
oil, olive, salad or cooking
carrots, raw
cranberries, dried, sweetened
nuts, walnuts, english
Directions:
Blend tofu, vinegar, lemon juice, mustard, and salt in blender until smooth.
Blend in oil.
Toss tofu mixture with carrots and dried cranberries in bowl.
Chill 30 minutes.
Top with walnuts.
