Maple Pecan Banana Muffins
3 medium fairly ripe bananas
1 1/4 cups white full wheat flour
3/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoon unsalted butter, softened
1/4 cup maple sugar (or brown sugar)
2 significant egg whites
1/4 cup organic maple syrup
2 tbsp unsweetened apple sauce
1/2 teaspoon vanilla extract
1/3 cup beaten pecans
Recommendations:
Preheat oven to 325°F. Line a cupcake tin with liners.
Mash bananas inside of a bowl, established apart. Within a medium bowl, merge flour, baking soda and salt with a twine whisk. Preset apart.
In just a substantial bowl product butter and 1/4 cup maple sugar with an electric powered mixer. Increase egg whites, mashed bananas, maple syrup, apple sauce and vanilla; battle at medium rate till combined very well, scraping down facets of the bowl.
Increase flour blend, then merge at a lower pace right up until accurately mixed. Pour the batter into the composed muffin tin.
Spread the pecans lightly around the muffins.
Bake the muffins upon the centre rack for 30 to 35 minutes, or right up until a toothpick inserted inside of the heart will come out fresh.
