Crockpot Caponata
Ingredients:
- 1 lb plum tomatoes chopped
- 1 eggplant inside of 1/2" components
- 2 med zucchini inside 1/2" elements
- 1 onion finely chopped
- 3 stalks celery sliced
- 2 Tbsp purple wine vinegar
- 1 Tbsp brown sugar
- 1 tsp salt
- 3 Tbsp oil healed black olives (optional)
- 2 Tbsp capers (optional)
Directions:
1. Prep and measure ingredients.
2. Combine ingredients in the recommended order.
3. Adapted method:
Merge tomatoes, eggplant, zucchini, celery, onion, parsley, vinegar, sugar, raisins, tomato paste, salt & pepper in just crock pot. Cook, lined upon small warm for 5
