El Torito's Enchilada Sauce
Ingredients:
- 2 medium Anaheim chiles, roasted, peeled and seeded
- 1/3 cup roasted pepitas (pumpkin seeds)
- 2 garlic cloves, peeled
- 1/4 tsp. flooring black pepper
- 1 tsp. salt
- 12 oz. salad oil
- 1/4 cup pink wine vinegar
- 5 Tbs. grated Cotija cheese (look at take note)
- 2 reduced bunches cilantro, stemmed
- 1 1/2 cup mayonnaise
- 1/4 cup water
Directions:
1. Prepare all ingredients and equipment before starting.
2. Build the dish in stages over medium heat, stirring as needed.
3. Adapted method: Cook until done and season to taste.
4. Finish, taste, and serve.
