Brownie Chip Meringues
Brownie Chip Meringues
Ingredients:
15 ounces (2 1/2 cups) semisweet chocolate chips, divided
4 egg whites
1/8 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon cider vinegar
1 cup granulated sugar
1 cup chopped walnuts or pecans
Directions:
1. Preheat the oven to 350°F.
2. In a small saucepan, carefully melt 2 cups of the chocolate chips and set aside to cool.
3. Beat the egg whites with the salt, vanilla, and vinegar until the mixture stands in soft peaks. Gradually add the sugar, beating again until stiff peaks form. Fold in the melted chocolate, the remaining chocolate chips, and the nuts.
4. Drop by tablespoons onto greased baking sheets, spacing well apart. Bake for about 10 minutes, or until firm. Do not overbake. Store in airtight cookie tins.
Note:
Chewy chocolate and nuts enveloped in an airy meringue make a festive treat.
