Swedish Christmas Eve Soup (Dopp i Grytan)
A traditional Swedish "dip in the pot" served on Christmas Eve, originally made by dipping bread into the juices from the roasting ham. If you are roasting a ham, use the pan broth in place of the beef stock.
Makes 6 servings
Ingredients:
6 cups beef stock
Salt and ground white pepper
Rye dipping bread, cut into large cubes
Melted butter
Thinly sliced lemon
Directions:
1. Pour the stock into a large saucepan, season with salt and white pepper and bring to a boil.
2. Meanwhile, toast the bread cubes on a baking sheet under the broiler and drizzle with melted butter.
3. Place the toasted bread in soup bowls and pour the hot broth over. Serve with the lemon slices.
