Lentil Stew with Sausage
Lentil Stew with Sausage
Fast and inexpensive; terrific on a cold night.
Ingredients:
About 4 cups lentils
4 slices bacon, chopped
Oil
Polish or farmer's sausage, chopped
1 large onion, chopped
1 bag carrots, chopped
2-4 bouillon cubes
About 6 cups water
1/2 cup vinegar
Salt and pepper
Directions:
1. Sauté the onion and bacon in oil (a pressure cooker works well).
2. Add the sausage, lentils, bouillon cubes and about 6 cups water. Heat thoroughly, stirring occasionally and adding water as the lentils absorb it, to keep a stew consistency.
3. Add 1/4 cup of the vinegar and cook about 1 hour. Add the carrots.
4. Continue cooking until the lentils are soft, about 2 1/2 hours more, or pressure-cook about 15 minutes.
5. Season to taste with salt, pepper and the rest of the vinegar.
