Chicken with Leeks, Sunshine-Dried Tomatoes in White Wine Sauce

1 or 2 leeks (3/4 cup) white section and mild green just
16 oz (6) skinless chicken breast cutlets, sliced slender
2 tsp butter, separated
2 tsp olive oil, separated
1/4 cup all reason flour* (employ the service of rice flour if gluten no cost)
1 clove garlic, minced
