Monkey Salad
Monkey Salad
Traditional monkey salad uses sliced bananas as a base, and that's where the "monkey" name comes from. Because bananas are high in carbohydrates, this version leaves them out, but the flavor is so good you won't miss them.
Serves 4
Ingredients:
2 tablespoons butter
1/2 cup unsweetened coconut flakes
1/2 cup raw, unsalted cashews
1/2 cup raw, unsalted almonds
1/4 cup 90% dark chocolate shavings
Directions:
1. Melt butter in a medium skillet over medium heat. Add coconut flakes and sauté until lightly browned, 3–4 minutes.
2. Add cashews and almonds and sauté for 2 minutes. Remove from heat and sprinkle with dark chocolate shavings. Serve immediately.
