Shucked Liquor Cajun Oysters
Ingredients:
16 large fresh oysters, shucked (oyster liquor reserved)
1 cup (250 g) refrigerated or jarred Alfredo sauce
2 to 3 teaspoons hot pepper sauce
2 large croissants, halved and hollowed out in the center
4 teaspoons caviar (optional)
Directions:
Pour /1 cup (60 ml) of the reserved oyster liquor in a large

skillet. Add the oysters and simmer until plump, about 30
seconds. Using a slotted spoon, remove the oysters to a plate
and cover to keep warm. Cook the liquid in the pan over
medium-high heat until reduced to about /1 cup (60 ml), 2 to

3 minutes. Reduce the heat to medium-low and stir in the
Alfredo sauce and hot pepper sauce. Cook 1 minute, then
return the oysters to the pan and heat through.
Spoon the mixture evenly into the croissants. Top each
serving with 1 teaspoon caviar, if using.
