Full Canned Smoothies
Ingredients:
1 cup full-fat canned coconut milk
2 tablespoons chia seeds
2 tablespoons coconut oil, melted
Directions:
1⁄ cup frozen blueberries
4
Choosing Coconut Milk
The coconut milk that comes in a box is full of preservatives and low in fat. Some sweetened varieties
contain sugar or other sweeteners that increase carbohydrate content. Look for full-fat coconut milk in a
can that contains only coconut milk or a combination of coconut milk and guar gum.
1. Place all ingredients in a blender and blend until smooth.
2. Serve cold.
Chocolate Almond Smoothie
Turn this into a chocolate coconut smoothie by using coconut milk and coconut
butter instead of almond milk and almond butter.
Ingredients
Serves 2
1 cup unsweetened almond milk
1⁄ cup sugar-free almond butter
4
2 tablespoons unsweetened cocoa powder
1⁄ cup heavy cream
4
11⁄ cups ice
2
5 drops liquid stevia (optional)
The Power of Stevia
Stevia contains no carbohydrates or calories, but is 200 times sweeter than sugar, so a little goes a long
way. You can also use powdered stevia in place of liquid stevia, but the liquid versions tend to blend
better, especially with cold liquids.
1. Put all ingredients in a blender and blend until smooth.
2. Serve cold.
Pumpkin Pie Smoothie
Don’t confuse pumpkin purée with canned pumpkin pie filling. Pure pumpkin
purée contains only the flesh of a pumpkin, while pumpkin pie filling contains
sweeteners that increase sugar and carbohydrate content.
